  • 1/2 teaspoon salt
  • half cup minced fresh chives, plus extra for garnish
  • half of cup solar-dried tomatoes in oil, drained and chopped
  • 1 avocado, quartered and sliced
  • Favorite warm sauce

Instructions :

  • In saucepan, fall apart tube of prepared-to-heat grits, and heat over medium warmth with 1/2 cup coconut milk till warm and creamy, approximately five mins.
  • Add corn kernels. Continue cooking for every other five mins.
  • Add olive oil, salt, and chives and integrate nicely earlier than portioning into four bowls.
