Bridget's Family Corn Casserole

1 1/2 cups shredded Cheddar cheese
half large onion, chopped
1/2 massive crimson bell pepper, chopped
three eggs, overwhelmed
1/2 cup milk
2 tablespoons chopped green olives, or to taste
salt and ground black pepper to flavor
2 cups corn chips (together with Fritos®), overwhelmed
