"This recipe is a version of kimchi I am pleased with. Your version can be quite one-of-a-kind, and that's good enough! - Place bok choy in a large bowl; add 1/four cup pickling salt and stir; cowl with an upside-down plate. Let salted cabbage sit until softened and liquid has been released, 2 to three days. Rinse cabbage in a colander and drain.
- Transfer cabbage to a smooth bowl; upload 1/4 cup pickling salt, Korean chile powder, inexperienced onions, carrots, serrano chile peppers, garlic, fish sauce, and ginger and blend properly.
- Pack cabbage combination into clean jars to inside 1 inch of the pinnacle. Tightly secure lids onto each jar.

Notes :
- Some people most effective use the thick white part of the bok choy. I am a cheapo and use it all. I hate to waste any of it.
- Sea salt may be substituted for the pickling salt. If this ends up too salty for you, simply modify the extent of salt in your subsequent batch.
- Cayenne pepper or 1/2 cayenne pepper and 1/2 crimson pepper flakes can be substituted for the Korean chile powder. Wear a few gloves in case your skin is touchy to purple pepper or spices.
- Jalapeno peppers can be substituted for the serrano pepper.
