Ingredients :

- 1 (3 pound) red meat shoulder roast

- half cup clean cilantro leaves
- three cloves garlic, minced
- 2 (12 ounce) bottles beer, or as needed

- Rub Cajun seasoning into the red meat shoulder. Put pork shoulder into a slow cooker crock.
- Pour jar of giardiniera with liquid over the pork. Sprinkle adobo seasoning over the beef and top with onion, cilantro, and garlic. Pour sufficient beer into the crock so the bottom half of of the roast is submerged.
- Cook on Low until the roast is falling aside, 6 to 8 hours. Shred the pork with a pair of forks in the sluggish cooker and stir with the liquid.
