Book Club Herb Roasted Chicken and Vegetables |
A crowd pleaser. Perfect for massive get-togethers (double recipe) or just for a circle of relatives dinner. Please be aware: I do no longer have a double oven, hence 1 half hour cook time.
Ingredients :
- 1 cup olive oil
- 2 teaspoons floor thyme
- 2 teaspoons dried rosemary
- 2 teaspoons dried oregano
- 2 teaspoons paprika
- 2 tablespoons lime juice
- 1 whole bird, reduce into 6 pieces - rinsed and dried with paper towels
- 2 onions, reduce into 1-inch thick slices
- 1 red bell pepper, reduce into 1-inch extensive strips
- 2 cups broccoli florets
- 1 bunch clean asparagus, 2-inch tips most effective
- 6 cloves garlic, peeled
- 2 cups fingerling potatoes
- salt and ground black pepper to flavor
