Bek's Minestrone Soup |
The absolute first-class minestrone I have tasted. A spicy twist on a traditional soup. I make this in big portions and freeze in 1 cup quantities for a fast meal. I every now and then slice and brown a highly spiced hen sausage and add it to this soup for my husband who loves meaty soup. Penne pasta or orrichette pasta can be cooked on the side and delivered at the cease!
Ingredients :

- 1 onion, chopped

- 1 (14 ounce) can red meat broth
- 1 ½ cups water

- 1 zucchini, chopped
- three carrots, chopped
- 1 (15 ounce) can garbanzo beans, tired
